Oatmeal Gingerbread Cookies

Our other project today was to make some cookies, I substituted flours and added Xanthan Gum to make them GFCF and they seemed to turn out just fine.

The hardest part was getting the oldest to take turns, but he got to roll out the dough so that made him happy. :)

They looked a little bit like dog biscuits before and after baking.

We added some icing and some chocolate chips and they weren’t Martha Stewart perfect, but they sure are yummy!

It was a great and successful day, we definitely got to spend a lot of time together having fun.  All of this hands on interaction makes the kids happy and the mama worn out! :)
